Today we can swim in a multitude of sharpening devices. I recommend reading my pages under how it works with fast sharpener and sharpening.
I recommend to have the edge up to date and to sharpen it regularly. The best is to use a fine surface on a diamond stone or a regular stone. If you use a diamond surface then the absolute
best is 600-800 grit. I use it like on the picture! Remember that the pressure you use when sharpening should be light but firm. It is the same with a stone and the pressure can make the edge finer with light pressure. When I slide the blade on the diamond
stone it looks like I am cutting of small flakes of the stone. It is of course metal coming off.
